Vietnamese Pho is the most famous traditional food in Vietnam. It names Vietnamese noodle that consists of broth, linguine – shaped rice noodles, a few herbs, and meat. It is usually eaten with beef or chicken. Southern Vietnamese eat it for breakfast and occasionally for lunch, whereas those from northern Vietnam consume it at any time of day with different style.
Vietnamese Pho originated in the early 20th century in northern Vietnam, in the villages of Van Cu and Dao Cu in Dong Xuan Commune, Nam Truc District, Nam Dinh province that located in southeast of Hanoi. According to villagers, Vietnamese Pho was eaten in Nam Dinh before the French colonial period. Vietnamese people sold Pho at dawn and dusk on the street. They shouldered mobile kitchens on carrying poles. In 1925, a Van Cu villager named Van opened the first “Nam Dinh style” Vietnamese Pho stand in Hanoi.
In 1930, “Phở tái” had been introduced that is served with beef cooked rare. Chicken noodle soup, it named “phở gà”, appeared in 1939, because beef was not sold at the markets on Mondays and Friday at that time. Southern Vietnamese usually have habit eating Pho with basil and bean sprouts, lime, onion, cilantro, cinnamon basil and so on. Northern Pho tends to use somewhat wider noodles and much more green onion, and garnishes offered generally include only vinegar, fish sauce and chili sauce. On the other hand, southern Vietnamese Pho broth is slightly sweeter and has bean sprouts and a greater variety of fresh herbs.
Officially banned as capitalism, these vendors carried their wares and set out plastic stools for customers. Northern Vietnamese served Pho with “Quay” during “subsidy period” following the Vietnam War. The broth in Vietnamese Pho consisted of boiled water, as there were often on various foodstuffs like meat and rice during that period. Bread or cold rice often served as a side dish, leading to the present – day practice of dipping in Vietnamese Pho.

Nowadays, Vietnamese Pho is served in a bowl with a specific cut of white rice noodle in clear beef broth, with slim cuts of beef. Chicken noodle soup is made using the same spices as beef, but the broth is made using only chicken bones and meat, as well as some internal organs of the chicken, such as the heart.
