(Vietnam Package Tours) Vietnamese Fried Spring Rolls has become a traditional dish of Vietnamese, especially the people of the North. Many locals of Vietnam assume it as their own specialty and give it their own name such as: “Nem Ran” by Northerners and “Cha Gio” by Southerners. The dish is presented in almost every menu of Vietnamese restaurant abroad.
This dish has rapidly become a favorite of Hanoian and to the affection as well as to remember the real origin of the dish; people in the South call it “Nem Sai Gon”.
In fact, “Nem Ran” is a favorite dish on some special occasions such as Tet holiday or other family's special days. Fried spring rolls is not only served with rice but also eaten with round noodle in the dish called: “Bún Nem”.
The recipe of this dish is pretty simple. So many mothers teach their daughters how to make this dish at home and the variations of this dish also follows each local. Ingredients used for the fried spring roll are different depending each local but usually it comprises of lean minced pork, sea crabs or un-shelled shrimps, edible mushrooms, dried onion, duck/chicken eggs, pepper, salt and different kinds of seasoning. There are also special variants of the traditional pork-based roll, such as Crab spring rolls or “Nem Cua Be”.

Prepare ingredients inside the fried spring rolls
The pork is chopped, onion is diced and carrot is julienne. Black mushroom, mushroom is soaked hot water, drop foot, rinse and then julienne small. Vermicelli is soaked in warm water and the use scissor to cut out. All these ingredients are mixed together to make thing inside the fried spring roll.

Mix all the minced ingredients with enough amount of spices, pepper, we have thing inside the fried spring roll. To have delicious fried spring rolls, we marinate it for 5 to 7 minutes to absorb. After that, we put egg into and mix well. Remember to put enough amount of egg, the dish will be better.
Fry the spring rolls
Preheat oil in a pan, then put spring rolls into oil and flip regularly. Fry spring rolls until it becomes golden and crispy.
About dipping sauce
Foreigners may not know that the bowl of fish sauce is not the same for every dish of Vietnamese meal. Each dish have a specific demand of dipping sauce and with fried spring roll it requires a good hand to make one. A quality dipping sauce bowl for this dish must be the harmonious combination of flavors such as lemon juice, sugar, and chili and pepper the fish sauce.
Northerners have habit to eat spring rolls with sweet and sour sauce. The recipe of dipping sauce as follow: firstly crush garlic, chili and the put them into a small bowl. Add vinegar, fish sauce, sugar and warm water. Depending on taste of your family, you can adjust the ratio accordingly.
The delicious fried spring rolls have yellow look with the soft and fragrant ingredients inside. Today, although there are many ways to make spring rolls as seafood spring rolls, vegetarian spring rolls and so on but traditional spring rolls is still a delicious food that Northerners love and eat in Tet holiday.
